Turkish lentil patties – Mercimek köfte

Mercimek köfte – Turkish lentil patties are one of the most popular and beloved dishes in Turkish cuisine. They are often served as part of a meze table (similar to tapas), for lunch, or as a light snack, and are known for their soft texture, fresh herbs, and warm, aromatic flavor. This plant-based classic is both simple to make and full of nutrients, and it truly brings the taste of Turkey into your own kitchen.

Mercimek köfte are not only full of flavor but also highly nutritious. Red lentils are an excellent source of plant-based protein, helping to keep you full while supporting muscle repair and recovery. They are also rich in dietary fiber, which supports digestion and provides a steady feeling of fullness. Combined with bulgur, which contributes slow-releasing carbohydrates and long-lasting energy, these small lentil patties become a healthy and well-balanced meal or snack.








Turkish lentil patties – vegan

The recipe serves 4 people when served as a side dish alongside other dishes.

Total time: 45 minutes

Preparation time: 15 minutes

Cooking time: 30 minutes


Ingredients

  • 1.5 dl red lentils

  • 4 dl water

  • 1 small onion, finely chopped

  • 1 tbsp good quality olive oil

  • 2 tbsp good quality tomato paste

  • 1 dl fine bulgur (the very small/fine type)

  • 1 small bunch flat-leaf parsley

  • 1 small bunch spring onions

  • 1 tsp sweet paprika

  • 1 tsp ground cumin

  • Freshly squeezed lemon juice

  • Salt & pepper

Optional for serving:

  • Lettuce leaves


Method

  1. Rinse the red lentils thoroughly (this is important, otherwise they can taste a bit off).

  2. Cook the lentils in about 10–15 minutes, until they are completely soft. It’s okay if there is a little excess water left.

  3. Add the bulgur to the hot lentils, stir well, cover with a lid, and let it rest for at least 15 minutes so the bulgur can soften.

  4. In a pan, sauté the onion in olive oil. Add tomato paste and spices and cook briefly to release the flavors.

  5. Mix the onion mixture into the lentil and bulgur mixture and stir well until fully combined.

  6. Add fresh parsley, spring onions, and lemon juice. Season with salt and pepper to taste.

  7. Shape the mixture into small, finger-shaped patties using your hands.

  8. Traditionally, they are served on lettuce leaves, but they can be enjoyed however you like. The photo above shows how I last served them – with a light salad and steamed broccoli dressed with olive oil, lemon juice, and garlic.
